Crispy Mixed Berry Cobbler (Nut/Egg Free)

This is a super simple nut and egg free cobbler! I’m always looking for fun treats that my son can enjoy. He’s allergic to nuts and eggs and it’s not always easy to come up with baked goods for him. I hope you enjoy this tasty treat and top it with fresh whipped cream.



Recipe

Filling:

· 5 cups frozen mixed berries

· 1/3 cup granulated sugar

· 1/4 cup all purpose flour

· 1 tbsp lemon juice


Topping:

· 1/2 cup all-purpose flour

· 3/4 cup brown sugar

· 1/4 teaspoon salt

· 1/2 cup melted butter

· 1 cup old-fashioned rolled oats


Instructions


*Preheat oven to 350°F and spray baking dish with non-stick cooking spray.


For the filling:


1. In a separate bowl mix frozen mixed berries, flour and sugar until evenly coated.


2. Add lemon juice and mix well.


3. Add filling mixture to dish.



For the topping:


1. Mix flour, sugar, salt and oats.


2. Add melted butter to mixture and mix well.

3. Pour evenly on top of filling and bake.



*Bake on 350°F for 45 minutes then turn up to 375°F for an additional 10-15 minutes or until cobbler is bubbling and topping is golden and crisp. Keep in mind this is a FROZEN fruit recipe, may need to adjust the baking time if you’re using FRESH fruit.



Remove from oven and let cobbler cool on cooling rack...

(if you can wait)




If you’re really feeling fancy you can top this with fresh whip cream or vanilla ice cream




Whipped cream:


  • 2 cups heavy whipping cream

  • 1tbs sugar


* whip with electric hand mixer until thick




Top the cobbler with a dollop of cream and I wish you could taste this cobbler now!
